The EQ on either will work well for what you'd want in a live situation, e.g., a mud cut. You cover a lot of bases with either of these, and while the compressors aren't as flexible as say an 1176 or LA-2A, they both work I tend to use them in a limiter role. I suspect that in a live streaming setup, you'll find having an expander to be a real asset. You can run these in the Unison slot both come with a gate / expander, high and low pass filters, compressor, and a simple EQ. What I'd recommend looking at for the noise consideration is either the API Vision or the Neve 88 channel strips.
You get a nice default loadout of plugins, and you can try anything for a couple of weeks. In my case anyway, it sure helps to have a bit of reverb in your cans. Live streaming, unless you're in a very quiet room, background noise is always a consideration. I think you'll find the MKII Duo to have adequate DSP such that you can run just about anything you'd want to. Having just been down this road myself with the same equipment, allow me to focus on the live stream portion, since I think that presents a narrower set of options, so it's easier to focus on. I have 45 days to try out your recommendations so I look forward to any and all advice! Then I realized I should ask for advice from knowledgeable folks. My first thought was the "Neve 1073 Pre-amp and EQ Collection" because I know the name Neve, lol. I have no need for the emulation since I'll be using real amps through the Torpedo Live. I also don't really want any guitar amps or pedals. Other considerations are that I would prefer to buy a few really good plugins that I can grow into and I want to maximize the value for the plugin bundle deal. I know that is more than 3 but I'm interested in what you would consider "essential". A channel strip (for a bit of general sweetness / tube-ish pre-amp). An EQ (covering vocals / guitar / bass). A limiter (for both live usage and recording). A compressor (for both live usage and recording). Plan on picking up a condenser mic for acoustic guitar / mandolin. Some light digital production (VST synths / drums). Recording singing and electric guitar / acoustic guitar / bass / mandolin. Live stream to youtube / twitch including spoken word, singing, guitar.
I figured that is a good deal but now there are so many plugins and I'm a bit new to them I feel I could use some help. When I registered it gave me the option to upgrade with a 3 plugin bundle discount. I've just jumped into the world of Apollo with the Twin Mkii Duo.
